Yuri on Ice!!! - Pork Cutlet Bowls


Katsudon aka Pork Cutlet Bowl - Yuri on Ice!!!

Pork Cutlet Bowls are what inspire Yuri to be his very best-eros self and what inspired me to finally cook,

These magical treasures originating from Japan are the perfect mixture of eggs, pork, and rice.
For today's recipe I will be using this recipe - Katsudon Recipe

Today I will be substituting all the meat with vegetarian options but feel free to keep the meat options, just make sure you cook the meat before hand.

It's time to make history!




Ingredients:
2 Vegan Quorn Fillets
3 Eggs
1 Small Onion 
Tip: You can use more, I don't eat a lot of onion so I find one small onion is enough. 
Oil
1/3 cup Vegetable stock or Dashi
Knowledge: Dashi is a Japanese soup stock, because I am not a great cook I just used vegetable stock - click here if you are feeling adventurous.

1 tablespoon of Sake  or 1/2 tablespoon of Rice Wine Vinegar and 1 tablespoon of Water)

1 tablespoon Soy Sauce
2 teaspoons Granulated Sugar
1/4 teaspoon Potato Starch / Coconut Flour
2 bowls of uncooked rice - I used 2 cups that came with the rice cooker
Tip: The rice is up to preference so make as much or a little as you like.
Peas (they will be used as a garnish)


Tip: I couldn't find Sake in any store around me so I used rice wine vinegar and water as a substitute.  To be a substitute for sake you should use a ratio of 1:2 (rice wine vinegar to water). However, I didn't want to break a single tablespoon in three parts, so I use 1 tablespoon of water and 1/2 table spoon of rice wine vinegar - the extra 1/2 tablespoon doesn't seem to affect the recipe.

A tid bit: I couldn't find potato starch either....so I used coconut flour. The ratio was very complicated, however lucky for us the recipe only calls for 1/4 teaspoon, which is tiny, so I just used the full amount. It didn't blow up, so I think using 1/4 teaspoon of coconut flout is fine.

Equipment:
Pan with lid
Mixing bowls
Rice cooker
Spatula
Tongs - not needed but super helpful





Start to cook the rice - most rice cookers use a ratio of 1 cup of rice : 2 cups of water
Helpful reminder: If you freeze your broth like I do, now would be the time to take it out and start to heat it up






Mix all the eggs together
- all the yolks should be broken
Tip: It should look like this
Next make the sauce - mix together the sugar, vegetable stock, soy sauce, rice wine vinegar, water, and coconut flour 


Cut the fillets in horizontal strips 
Tip: I use two fillets and then try to layer them so it looks like one fillet - I normally do have some pieces left over
Helpful hint: If you are not going to take pictures you can cook them all since it doesn't have to be pretty.
 
Cut you onion into thin strips - Start to cry

 
Tip: If you are scared of knifes like I am try cutting the onion in half and then again in the other direction.
Cook the onions in the pan with some oil until they start to turn brown

 When the onion are finished cooking move them to either side of the pan and place the fillet in the center. 
Pour the sauce over the fillet and onion, put on the lid and cook for 1 minute


After 1 minute, flip the fillet to make sure both sides are fully seasoned and pour the eggs over all of it!! 
Add some peas on top to make it look like its from the anime and all pretty. 
Place lid on top and cook until the eggs are cooked. 

Nugget of information: I like my eggs well done but the original recipe left the eggs more runny. 
Once cooked - put the rice into the bottom of the bowl and add the deliciousness from the pan on top!



Serve and enjoy but only after you win an ice skating championship!
